2013 Resolutions Project: Lemon Pound Cake


So I've told you peeps about my 2013 Resolutions Project
To Bake/Make/Cook something new each week
so by the end of the year, Monkey would have acquired 52 new recipes and to top it all, I will share with you :))))


you alwiz begin with heating up the oven, in this case at 325*F
then prepare 1 Cup + 2 TBSP of granulated sugar...I'm not a fan of sweet stuffs, so that got reduced to only a cup.

then slowly zest about 1.5 TBSP of lemon skin, if u like u can prepare more......and rub the zest with the sugar until it's well mixed. Dunk about 1 Cup of unsalted butter into the sugar mixture and whisk with a paddle in ur KitchenAid/whisker until it's creamie, pale and fluffy.

Wet Ingredients:
with the remaining naked lemon minus its skin, extract and squeeze out about 1.5 TBSP of lemon juice. Beat the hell outta 5 fresh eggs using a fork and add in the lemon juice. Also the secret to a moist pound cake is 1/4 cup of sour cream....so add this in as well.

Dry Ingredients:
meanwhile sieve 1 3/4 Cup of all purpose flour,
add 1/2 tsp of baking powder and 1/2 tsp of salt...

Now with the KitchenAid/mixer running on low....alternately add in the dry ingredients then the wet ingredients....in small batches....3 dry and 2 wet

just like playing sand and seawater by the beach....dry, wet, dry, wet, dry and we are done!!!!

Lastly line a baking tin with cooking spray....and some flour...
since I dun have cooking spray *perhaps time to get one*, JS helped Monkey to dab some olive oil and dusted the baking tin with some flour.

oh yea...he makes one helluva assistant pastry chef :)))
he helped me to clean and threw the rubbish out...tee hee hee
and doin things I'm not capable of *or refused to* such as removing a hot baking tin outta its oven :P

so voila!!!! pour the mixture into the baking tin and baked for about 55 minutes at 325*F. Do check with a skewer, it must come out clean with some moist crumble. If it doesn't, let it bake for another 5-10 minutes.

transfer the whole tin into a wire rack and let it cool for about 15 minutes, then u may turn the cake out.



it should be golden on the outside and of coz butterie!!!!

This Lemon Pound Cake is usually served with a lemon syrup or lemon glaze but I was too lazy to prepare them....and again I'm not a fan of overly sweet stuffs

so lazy Monkey just dusted some icing sugar on top.....and add more lemon zest before serving. Simple isn't it? Do give it a try...and definitely fool proof, idiot proof etc hahahahahaha

coz if Notti Monkey can bake it...so can anyone :)))))

  1. me big fan of lemons! made something similiar before but I also omit the icing... cos I felt it was too sweet too...

    great resolution... looking fwd to more recipes....
